Paleo Stuffed Peppers

photo 1Why does getting back on track after the holidays seem so difficult sometimes? Motivation is high this time of year, but many find it tough to stick with that new diet. One of the best ways to help you stick with a new – or renewed – diet is to take the extra time to make some delicious food, instead of forcing yourself to eat something that tastes boring or plain bad because it’s “healthy”. These fairly easy stuffed peppers will make things a little easier.

  1. This morning, Coach Pat coached us through Tuesday’s workout. The technique work is definitely helping. There were definitely some strokes in which I was feeling that “bodies over-slingshot” feeling.

  2. Can’t make it to Boston this year. But plan on doing Tough Love in Portland. Oregon on the same day.

    Will see what I can do with such a short prep time. Last time I did it in a 6:44 but prepared for a year. Hope for a 7:00 this time since I let things go to hell over the last year with fitness.
